Hello Friends,

If you’ve been reading my newsletter over the years, you’ll know that I’ve long had a gripe with both the food industry and the health industry. The former relentlessly pushes unhealthy food choices, while the latter too often fails to recommend truly nourishing food—and even hospitals frequently serve meals that do little to support the health of doctors, nurses, or patients.

That story deserves its own issue, one where I can share inspiring examples of positive change already happening in the world. I’m saving it for when I can do it justice.

This issue, instead, begins with a vegetable I’ve had a love–hate relationship with—and how I’ve finally made peace with it because of its remarkable health benefits. The second story explores France’s new ban on “forever chemicals” in personal care and other products, which came into effect this month.
